There are many different recipes for pancakes, and they're all pretty much the same. This is my one :)
Ingredients
1 egg
1 1/2 cups milk
1 tsp vanilla essence (optional)
1 TBS melted butter (slightly cooled)
1 TSP baking powder
1 cup SR flour
2 TBS caster sugar
Butter/margarine for cooking
Toppings
anything you want really
nutella
cream
strawberries
jam
lemon and sugar
honey etc. etc.
How to make!
1 - crack the egg in a large mixing bowl, break the yolk and lightly whisk with the milk and vanilla essence. This is the wet mixture
2 - Using a sieve, sift the flour, baking powder and caster sugar over the top of the wet mixture. Use a wooden spoon to stir.
3 - When roughly combined add the melted butter and continue stirring. It is okay for the mixture to be slightly lumpy, so it is not necessary to stir to a completely smooth texture, sometimes it makes the pancake rubbery. We don't want that, we want them to be fluffy.
4 - Bring the pan to a medium heat and add the butter in, it shouldn't spatter otherwise it's too hot. You don't want it too hot otherwise your pancake will burn before it gets to cook completely! Pour in some batter and wait until you see bubbles appear, when they do appear flip the pancake over and cook until both sides are golden.
5 - Serve with desired topping and enjoy!
Tips
- Use a heavy based frypan, this avoids hotspots when cooking... so basically it'll cook more evenly and give a more even golden colour too. I use Circulon pans :D, plus side of using this pan is that I only need to add butter in once at the start cos of it's uber cool non stick coating. If you use a normal pan with a thin base, be careful when cooking your pancakes you may have to bring it down to a lower temperature because the heat MAY not distribute as evenly and so need to cook it slower. Not only that but the pancake will be closer to the source of heat.
- If you plan to stack the pancakes, put a piece of foil over the top to avoid losing too much heat, unless you like them cold of course.
